Here are three of the cookies in the cookbook!  Two of them were my Mom's recipes - Pecan Puffs and Hershey Kiss Peanut Butter Cookies, and one is Ms. Amber's Thumbprint Cookies.  I used Brach's stars instead of the Hershey Kisses this year for easier packing.

 

 

 

 

Sept. 21, 2007

Tonight I had to figure out what to do with 1/2 # of ground chuck that was leftover from some soup I had made, and Ms. Brandy C's Sloppy Joe recipe started calling my name.

I had to cut all of the ingredients in half to match 1/2 the beef, but it turned out so delicious!  I ended up simmering it for an hour waiting for Larry to come in from working on a project, but that just made the hamburger very very tender.

Supper tonight was highlighted by Mrs. Amber B's Bisquick Cheddar Garlic Biscuits.  I used low fat milk, bisquick, and cheese, but we insisted upon using the real butter as stated in the recipe because it makes them so DELICIOUS!!  This recipe was so quick and easy and Larry was very pleased with the results!  We are going to have these many more times, Lord willing.

Today we tried Mrs. Jessie F's Cheesecake recipe.  It was WONDERFUL!!   So delicate and lighter than air with the perfect cheesecake flavor.  I substituted lowfat cream cheese, Smart Balance, and skim evaporated milk, and the cheesecake was so good that we could not tell that it was low fat/low calorie.  We loved this!

Mrs. Mavis B's Dump Cake recipe was just calling my name when I saw all of those wonderful ingredients.  I substituted Smart Balance for the oleo so that we would feel less guilty about having a whole 9x13 pan to ourselves.  Larry had two pieces which is a good indication of how delicious it is.  This would be a great cake for the potluck!

Today we tried Mrs. Helen K's Parmesan Chicken.  It was really delicious.  I would be able to make this for guests even with my limited cooking ability.  Larry gave it a huge thumb's up!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 This week we are trying Mrs. Ethel R.'s goulash.  I got this recipe out of the Maranatha Baptist Church cookbook and was happy that I had all of the ingredients on hand.  It was a nostalgic walk back into the past for me.  The kind of recipe my Mom used to make at home.  I only had half the macaroni noodles that I needed so I added egg noodles too.  Tasty!
